I had the best pumpkin lasagna the first night there, and had to re-create this somehow. It's not gonna be as good as in Italy, but pretty darn close and DELISH!&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://4.bp.blogspot.com/-EzQIqJotfp0/TxY4pvQ_hYI/AAAAAAAAB5E/5iynKsOxSeU/s1600/381813_10101496093064324_2313241_77737875_1374252965_n.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"&gt;&lt;img border="0" height="400" src="http://4.bp.blogspot.com/-EzQIqJotfp0/TxY4pvQ_hYI/AAAAAAAAB5E/5iynKsOxSeU/s400/381813_10101496093064324_2313241_77737875_1374252965_n.jpg" width="297" /&gt;&lt;/a&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;Ingredients&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; * 1/2 pound sliced fresh mushrooms&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; * 1 onion, chopped&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; * 1 teaspoon salt, divided&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; * 2 teaspoons olive oil&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; * 2 cans (15 ounces) solid-pack pumpkin&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; * 1 cup half-and-half cream&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; * 1 tablespoon dried sage leaves&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; * 1 teaspoon black pepper&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; * 9 no-cook lasagna noodles&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; * 1.5 cup ricotta cheese&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; * 1 cup (4 ounces) shredded part-skim mozzarella cheese&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; * 1 cup shredded Parmesan cheese&lt;br /&gt;Directions&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; * In a small skillet, saute the mushrooms, onion and 1/2 teaspoon&lt;br /&gt;salt in oil until tender; set aside. In a small bowl, combine the&lt;br /&gt;pumpkin, cream, sage, pepper and remaining salt.&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; * Spread 1/2 cup pumpkin sauce in an 11-in. x 7-in. baking dish&lt;br /&gt;coated with cooking spray. Top with three noodles. Spread 1/2 cup pumpkin sauce to edges of noodles. Top with half of mushroom mixture, 1/2 cup ricotta, 1/2 cup mozzarella&lt;br /&gt;and 1/4 cup Parmesan cheese. Repeat layers. Top with remaining noodles&lt;br /&gt;and sauce.&lt;br /&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; * Cover and bake at 375° for 45 minutes. Uncover; sprinkle with&lt;br /&gt;remaining Parmesan cheese. I discovered this at one of my favorite greek restaurants in Chicago, and had to replicate it somehow! The best part about this is you can control the spice to your taste. I LOVE spicy, so this is my kind of appetizer. You can serve this with pita chips, sliced french bread, chicken or even steak.&lt;br /&gt;&lt;br /&gt;&lt;div align="center"&gt;Ingredients:&lt;/div&gt;&lt;div align="center"&gt;2- 4 ounce containers of crumbled feta&lt;/div&gt;&lt;div align="center"&gt;1 cup of marina sauce&lt;/div&gt;&lt;div align="center"&gt;1 teaspoon pepper&lt;/div&gt;&lt;div align="center"&gt;1 jalepeno pepper, minced with seeds&lt;/div&gt;&lt;div align="center"&gt;1 tablespoon dried oregano&lt;/div&gt;&lt;div align="center"&gt;1 tablespoon of chopped parsley&lt;/div&gt;&lt;div align="center"&gt;1/4 cup of&amp;nbsp; kalamata pitted olives&lt;/div&gt;&lt;div align="center"&gt;optional if you like HOT-pinch of cayenne ground pepper &lt;/div&gt;&lt;div align="center"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div align="center"&gt;Combine all the indredients in a large bowl, taste and add more cayenne if needed. Refridgerate for an hour. Pour into a large casserole dish, 9x13 or larger.&lt;/div&gt;&lt;div align="center"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div align="center"&gt;In a food processor, pulse&amp;nbsp;the crumble ingredients until they are well incorporated. Pour on top of blueberries, and with your hands, pat down until well covered. Bake in the oven for 40 minutes, and then broil on high for about 5 minutes. MAKE SURE TO WATCH WHILE ON BROIL. Add the garlic and shallots, stir until tender. Add the spinach, batches at a time. You will see that all that spinach is not that much at all when cooked! Add the bacon, and cook for about 15 minutes until brown and crispy. Place the bacon on a dish to cool.&lt;/div&gt;&lt;div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;"&gt;The same pan as where the bacon was, add 3 tablespoons of olive oil. Add the cauliflower pieces, and fry on high until golden brown for about 10 minutes. If you are an eggplant lover, this is your soul mate:) I usually don't make it that often since I always prefer Hummus, but I tend to forget how much I love it! Bake in oven for 20 minutes until tender. Cool for about 10 minutes before peeling. &lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;In food processor, mix the tahini, lemon, garlic and olive oil. Pulse a couple times to incorporate. Peel the eggplant skin, and scoop the insides into processor. Pulse a couple times until creamy and smooth. I decided to leave out the fix-ins and&amp;nbsp;put them on the side so my guests could choose what they wanted to add. I also experimented with Gouda (love) cheese, and it was excellent! Add about 2 tablespoons of salt. Add in pasta and cook for about 7 minutes. Drain and set aside.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;Heat milk on medium-low in a saucepan, just until it is hot. While that is heating, add the stick of butter in a large pot. When melted, incorporate the flour. Add in a little at a time, and make sure to whisk. Keep whisking until all the flour is cooked in with butter. Gradually whisk in the hot milk. Let cook for 5-10 minutes on simmer , then whisk again until thick enough. Take off the heat, and add in the spices. Then add the cheeses. Mix well until cheeses have melted. Taste at this point, and add salt if needed. Pour into a 13x9 casserole dish. &lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;In a separate small bowl, add the panko, parmesan cheese and any remaining cheddar or gouda you might have (1 cup total of remaining cheeses). Spread on top of macaroni. Add the nuts at the bottom. Layer the frozen rolls in the pan. Sprinkle the pudding mix over the rolls, with a teaspoon of cinnamon. In a small saucepan, combine the butter, brown sugar and remaining cinnamon. Melt and stir until combined well. Pour over the rolls. Cover with towel and let sit overnight. Next day, the dough will rise. This has to be the most important part of this dish because you want to cook the onions until they are dark brown, ALMOST burned. See the first picture above. Stir occasionally on medium high-high heat, this will take about 20 minutes. When they are turning brown, heat water in a separate pot. I use my tea kettle, and that works great. When that has come to a boil, and the onions are almost burned, add the boiling water to the onions. Add the lentils and stir. Have this come to a boil, and then turn on medium heat. Cook until the&amp;nbsp;water has almost absorbed the lentils. Lastly, add the burgal last and change to low heat. Keep stirring or the burgal will stick to the bottom and burn. Add the spices. Serve hot or cold with yogurt, onions, and pickles. This is a lot, so you can put it in batches. Grind until well incorporated. Add the salt,&amp;nbsp; pepper, cumin and baking powder. At this point, you can freeze the batter you don't want to use without the baking soda added. This is when you want to get your friends involved to help! This salad only requires the parsley leaf, not the stem, and you do not want to waste any by chopping off the bunch. This means you have to hand pick each leaf off. Don’t be scarred! Just pop in a movie, have a glass of wine and get it done. After picking the 3 bunches, wash in a large bowl. Then spread on a towel to air dry for a couple hours (if you can, overnight). OR you can spin dry in batches. After they are dry, hand chop or throw in a food processor until the parsley very fine. When this is done, we are ready to make the salad. Combine the parsley, tomatoes, onions in a large bowl. In a small separate bowl, add the burgal. Rinse with warm water, and drain out. Throw that in the salad. Add the lemon and salt, mix well. Taste at this point and add in what you prefer, if it’s more lemon or salt. You can also add in garlic if you like. This is really great to eat with lettuce as well. Use the lettuce as you would pita, and scoop the tablouli. When boiling, turn to low and simmer for 20 minutes until done. Put in medium bowl. Add the rest of the ingredients and mix well. Ready to serve with sea bass!&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&amp;nbsp;Preheat oven to 450.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;Heat olive oil for mushroom topping in a large skillet pan. Add the onion for about 5 minutes, mix well until cooked through. Take the pan off the heat, and add the wine. Place back on heat and cook until wine has absorbed the onion. Add the mushrooms and butter. and cook for about 10 minutes. Add the chicken stock and salt &amp;amp; pepper to taste. Cook on medium heat until it begins to thicken and the liquid is almost gone.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;In another oven proof pan, or cast iron skillet, add the oil and heat on high until the pan is hot. Season the filets with salt and pepper on both sides. Add to hot pan, skin side first, for 5 minutes, then flip and cook for about a minute. Transfer directly to the oven for 3 minutes. Toast the pine nuts until golden brown. Set aside on plate when finished. Add 1 tablespoon of olive oil in same pan and add the chopped onions. Spread the eggplant between both baking sheets. Spread the oil on both sides of the eggplant, and season both sides with salt and pepper. Place in oven for 10 minutes, then flip the eggplant and cook for another 10 minutes. Add the last tablespoon to the same pan again, and add the meat. After 10 minutes, add the allspice,&amp;nbsp;and salt and pepper to your taste. Add the meat mixture on top of the eggplant in the 9x13. Then add the remaining eggplant on top of the mixture. Top with the 2 cans of tomatoes. Cover this with foil and bake in oven for 35-40 minutes until bubbling. Serve with rice. I pretty much love to incorporate it into anything I make. It just gives it that coffee liquor kick you need. The combination of baileys with chocolate is UNREAL. Get two cookie sheets ready, line with parchment paper.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;Mix together the first 4 dry ingredients in a small bowl. With an electric&amp;nbsp;mixer, combine the butter with sugars. Add in eggs, one at time until creamy then the baileys. Add in dry ingredients slowly, in about 4&amp;nbsp;small batches. I don't like to overmix my dough, so at this point, I had mix/fold in the oats and the choice of raisens or chocolate.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;Spoon with tablespoon and spread on sheets. Bake for 10-12 mintues. border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;"&gt;3/4&amp;nbsp;cup of walnuts or pecans&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;"&gt;&lt;br /&gt;Preheat 275 degrees. Spray any pan you'd like to use with spray, butter or oil. Depending on the size of the pan, you&amp;nbsp; might have extra which you can always bake in another pan. Mash banana with lemon in small bowl. With a mixer, cream the butter, sugars, until light and fluffy. Beat in eggs, sour cream, and baileys. Mix flour, baking soda and salt in another bowl. Beat in flour mixture and buttermilk&amp;nbsp;into butter/sugar mixture. Then banana mash last. Pour into pan and bake for about 1hour and 15 minutes. This bakes differently depending on the oven, so might be longer. Just make sure to test with toothpick, and if it comes out clean, it's ready to come out of the oven. Remove from the oven and place directly in the freezer for an hour. &lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;"&gt;For the topping, combine all the ingredients in a food processer. Spread on cookie sheet on parchement paper for 15 minutes until golden brown at 350 degrees. Let cool, this will set into a crumble. Break up into pieces.&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;"&gt;Frosting, beat the cream cheese and butter until fluffy. Add in baileys. Add in sugar one cup at a time.&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;"&gt;To assemble: take cake out the freezer, spread the frosting on cake then add the crumble. Serve right away, or this can sit overnight in the refridgerator. In arabic, it is called "Shorabot Addas"...as a child, I just remember calling it the yummy lemon soup:) I guess you can say it is the middle eastern version of chicken lemon rice soup, minus the chicken! After water is almost boiling, add lentils and chopped onions. When boiling, lower to simmer and cover for 30 minutes. Add the 2 boullion cubes in pot. Mix oil, flour, and spices in a small&amp;nbsp;bowl. Add 1/4 of soup to the mixture in the small bowl and mix, to incorporate the flour with the soup and make a thick paste texture. Pour in the mixture, and make sure to whisk in the soup and stir well. Add the juice of 2 lemons and simmer for a minute.&lt;/div&gt;&lt;div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;"&gt;Ready to eat! I always have add an extra lemon since I squeeze it directly into the soup when I serve in a bowl, and sprinkle pepper on top! Hummus basically consists of chickpeas, tahini (a sesame paste) and FRESH ingredients. Not only is it easy, but such a great snack and you can do so many awesome things with hummus. My personal favorite is eating it with Taboli (a middle eastern salad) and pita bread. Here are some other tips that you can creatively use hummus:&lt;br /&gt;&lt;ul&gt;&lt;li&gt;Hummus Sandwich- 2 slices of wheat bread, 3 tablespoons hummus, 2 tablespoons of feta, 1 tablespoon of kalamata olive, 4 slices of cucumber and 2 slices of tomatoes...heaven.&lt;/li&gt;&lt;li&gt;This goes great with any choice of meat, grilled chicken and steak, just divine. Try to spice up your chicken/steak fajitas with a dap of hummus, so delicious with salsa too you would be surprised!&lt;/li&gt;&lt;li&gt;Serve with veggies! You will notice how chunky it is, so then you add in water gradually. This will thin it out, you can add more water, garlic and lemon depending on your taste! This can easily be doubled, tripled as well:)&lt;br /&gt;&lt;br /&gt;&lt;div&gt;To garnish, I love to give some color to the dish. Make the brownie according to package in&amp;nbsp;cake round pan #1. Line the pan with parchment paper so it does not stick. Make sure to fill the pan 3/4 full, if you have extra, make into separate pan and keep yourself! Let cool for 10 minutes and flip. 2 mintues before done, add the mallows on top. Make the cheesecake (and&amp;nbsp;cookie)&amp;nbsp;the same way, in another cake pan #2, no crust needed just the batter. Bake for 45 minutes until brown. Test by jiggling the pan to see if batter is cooked through. Cake pan #3, press the cookie dough into pan and back&amp;nbsp;for 15-20 minutes.&lt;/div&gt;&lt;div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;"&gt;To Assemble:&lt;/div&gt;&lt;div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;"&gt;Cookie at the botom, layer the cheesecake in the middle, and brownie smore at top. Melt the chips at low heat with cream. This will make you ganache topping! You can vanilla if you want, or a hint of baileys:) When cooled, spread over entire cake and then crumble grahm crackers over the cake.
